"Why Fermentation" Cooking Class with Star Mountain Kitchen & La Cuisine

Let us gather together to celebrate the abundance of this harvest season! We will learn and practice the traditional technique of lacto-fermentation to preserve and enhance vegetables to enjoy through the coming winter. Lacto-fermentation is a biological process where sugars and starches in vegetables or fruits are converted into lactic acid by many species of lactic-acid-bacteria.

In this class you will learn the foundational skills from Chefs Aaron & Sarah at Star Mountain Kitchen needed to be able to lacto-ferment a wide array of vegetables at home.

Participants will prepare and take home (with re-usable jars):

Traditional sauerkraut with wild greens

Beet kvass

Pickled ginger carrots

Honey preserved garlic

Guests will enjoy a nosh station full of organic and fermented/preserved treats as appetizers during the class. Some combination of sourdough*, cheese, cured meats, olives, fermented vegetables*, chocolate, wine/water kefir* (*indicates home-made, otherwise sourced with local ingredients)

Suggested Wine Pairing: Chateau Thivin Brouilly Reverdon 2021 $28.95

Precise, soaring floral aromatics, finely etched tannins, a ripe core of dense wild berry fruit, and a granitic crunch on the back end are the hallmarks of this momentous cuvée from beaujolais. A light wine perfect for picnic pairings and charcuterie.
